With her studied, inventive approach to the culinary arts and dynamic leadership qualities, Franky Descoteaux with the assistance of her husband Matthew was the anchor of Mambo Grill when it opened in 2004. Now, three years later, there is no question that Franky has and continues to be the motivating talent who has raised the bar for fast-casual dining in the reborn Downtown Lowell.

The concept and overall experience of Mambo Grill is dedicated to highlighting the best this historic location has to offer – pristine ingredients from local purveyors, old-world views of a post-industrial city, and a comfortably casual approach to the dining experience. Lowell is also a place that perfectly suits Franky’s active lifestyle – from overseeing a fast-paced kitchen, and rustic old world-style dining room to cycling on the river, racquet-balling and dancing.
A recent scholar of food history, Descoteaux describes her artful approach to cooking as "modern Mexican with Baja-California influences."

"It was my goal to provide flavorful food for people without a side of guilt.  Our dishes are healthy, fresh and addictive." She continues, "I have always worked hard to maintain strong ties with local butchers, growers and farmers markets. Fresh local ingredients and resources are fundamental to Mambo’s à la carte menu."
