Pectin: Processing
Challenges |
Are
you interested in
learning how you can
completely disperse
pectin and reduce your
batch time from hours to
minutes?
Pectin is commonly used
as a gelling or
thickening agent or a
stabilizer in various
food products. Probably
the most familiar
application is providing
the thick consistency to
jellies, jams and
marmalades. Pectin is
also used to stabilize
acidic protein drinks,
such as drinking yogurt,
as a fat substitute in
baked goods and because
pectin is not digested,
it is considered a
beneficial dietary
fiber. Pectin isn't just
used in the food and
beverage industries,
it's also found in
various cosmetic and
pharmaceutical
applications.
Mixing pectin
can be a real challenge!In
the past, it was
necessary to premix
hydrocolloids of this
nature with other inert
powders such as sugar to
act as a dispersant. In
addition, temperature of
the fluid at time of
dispersing and hydration
